Simple Harvest Farm’s Peppermint Tea

Strip the peppermint leaves from the stem.
Roughly crush, cut or chop the leaves.
Place the crushed leaves in a glass quart jar, enough to fill it about 1/3 full.
Pour boiling water over the leaves, just enough to cover them.
Let the leaves steep about 10-12 hours.
Pour the liquid through a strainer into another quart jar, keeping the liquid; compost the leaves.
Fill the jar with the tea concentrate full of water.
Serve cold.
Add a splash of lemon if desired.
