Simple Harvest Farm’s Cucumber Buttermilk Soup

Combine in a food processor or blender:
6 c. peeled and chopped cucumbers
½ c diced scallions
2 T. minced fresh cilantro or mint or dill
2 c. goat milk buttermilk
1 c. sour cream
3 T. lemon juice
1 tsp salt
Process until smooth.  Garnish with grated cucumber or diced tomato if desired.
Serve cold. Serves 6-8. Freezes & thaws very well. Make enough to enjoy a taste of summer all winter!
