Rainbow Chard With Raisins, Almonds & Feta

Serving Size: 4 people
Prep/cook time: 20 mins

Ingredients:
2 tbsp sesame oil (or olive oil)
1 tbsp sesame seeds
1/4 cup slivered almonds
1/4 cup raisins
1 bunch rainbow chard
feta cheese to taste
salt to taste

Directions:
1. Place raisins in bowl of water to reconstitute them. Meanwhile, dice stems of rainbow chard, cut out vein and dice as well. Set aside, seperate from leaves. Chop leaves.
2. Heat oil in frying pan. Add sesame seeds and almonds and toast slightly. Add stems & veins first. Cook for a couple of mins then add raisins. Cook for 5 mins or so on medium heat.
3. Once stems become somewhat tender, salt to taste, add leaves and sautee until tender, another 5 mins or so.
4. Serve topped with feta.
