Featured Farmer Laura Heiman of Schoolhouse Apiary

Laura Heiman, Schoolhouse ApiaryLaura and Mark Heiman of Schoolhouse Apiary love their bees, and enjoy sharing that enthusiasm with visitors.  This is their twelfth year of beekeeping, and fifth summer at Riverwalk Market Fair.  Schoolhouse’s twenty hives are all located on organic land near Nerstrand State Park, and the honey produced reflects the particular forest and prairie plants of the area.  They harvest the raw honey in small batches every two or three weeks, so customers can taste the changing flavors of the season.  Schoolhouse Apiary also handcrafts their signature honey vinegar, made from homebrewed mead and aged for a full year.  This week, they will be sharing the first comb honey of the summer.  Keep an eye out for the observation hive too!
